Easy Taco Pizza

  So this past week/weekend was crazy! I went to visit my boyfriend with my puppy and did not get back until super late on Sunday so I didn't get to do my typical meal planning and cooking for the week. And Monday I still had to go to the store for some groceries before I could even make dinner. I just wanted something quick and easy but something that could feed me for a few days. I looked in the freezer and had some frozen ground meat and a pizza crust and IDEA! Taco Pizza!

     I have always been iffy about taco pizza because I don't like putting the lettuce and tomatoes on. It makes it really hard to reheat the pizza and have it still taste good and I don't like lettuce on tacos anyway (I know, I'm weird)! That being said if you like all the fixins' on tacos, then I suggest you stop here (just kidding, this could be a great place to start on a recipe for yourself!). 

Ingredients

1 jar queso dip (white or yellow)
1 Pizza crust*
1 lb Ground Meat
1 package Taco Seasoning
2 cups Mild Cheddar Cheese, shredded

*Side Note: I use a premade pizza crust that I buy in Amish Country (Holmes County) that is just unthaw and bake, and it takes about 20 minutes to unthaw. I have also used the Pillsbury Pizza Crust that is in a tube to make pizza and it turns out pretty well also. I have tried the packaged pizza crust that is found with the pizza sauce in the store and I always think that they have a weird flavor sometimes, so unless I am really in a pinch, I try to stay away. The other option would be to make a homemade pizza crust. This is a recipe I found that uses yeast and here is another that does not include yeast.

     Preheat the oven using the instructions for your pizza crust (my temperature was 425℉). Spread some olive oil on the pan you will use for the pizza crust (this makes a nice crispy crust). Brown the ground meat on the stove and add the taco seasoning and water. Let it cook so that the taco seasoning stays on the meat but the water boils off (you don't want a soggy pizza). In the meantime, spread as much queso as you see fit on the prepared pizza crust. I used about 1/2 jar, but you could definitely get more on there if you like lots of sauce. Once the meat is done cooking, spread evenly on the crust with queso, making sure to get all the way to the edges. Then top with the shredded cheese; the more the better (IMO). Bake for the time allotted on the pizza crust (mine was 12-15 minutes) or until the cheese on top is just starting to turn brown and the crust is brown on the edges. Remove from oven, cut and enjoy!

     That ended up being a little more lengthy than I had anticipated but overall the recipe is super simple and leaves lots of room to adjust and add ingredients. I usually dip in sour cream and salsa, but you could add more cheese and dip in queso and add tomatoes and lettuce and all the toppings you love.
